hat we have no idea who he was or where he lived. We do know, however, that for thousands of years, food was eaten cold and raw. Perhaps the first cooked food was heated accidentally by a forest fire or by the molten lava from an erupting volcano. No doubt, when people first tasted cooked food, they found it tasted better. However, even after this discovery, cooked food must have remained a rarity until man learned how to make and control fire.

Early people who lived in hot regions could depend on the heat of the sun to cook food. For example, in the desert areas of the southwestern United States, the Indians cooked their food by placing it on a flat stone in the hot sun. They cooked pieces of meat and thin cakes of corn meal in this fashion.

We can assume that the earlier kitchen utensil was a stick to which a piece of meat could be attached and held over a fire. Later this stick was replaced by an iron rod which could be turned frequently to cook the meat on all sides. Cooking food in water was impossible before man learned to make water containers that could not be destroyed by fire.

All of man' s history has been shaped by his search for food. Man' s first occupation was of that of a hunter, and his first stone weapons were made for hunting. Then man learned to grow plants for food.

They began to settle in communities next to their fields. More people lived in the places where food was more available. Progress has been greater in these parts of the world where there is more food to eat.

You may have heard that Americans like hot dogs and hamburgers best of all foods. Well, farmers and owners of public eating places might happily agree. So might the nation's Meat Institute and the National Hot Dog & Sausage Council. But people whose favorites are pizza and apple pie would give the meat-lovers a spirited argument!

Naming the favorite foods of Americans depends a lot on whom you ask. But one thing is sure. The ancestors of most Americans came from other countries. The United States owes many favorite dishes, or the ideas for these foods, to the rest of the world. Hot Dog

That traditional American favorite, the hot dog, had its modem beginning in Germany. The National Hot Dog and Sausage Council estimates that Americans eat about seven thousand million of these sausages during a summer.

A hot dog is usually made from pork, the meat of a pig. Or it is made from beef, the meat of a cow. Another version is made from turkey. A vegetarian version of a hot dog has no meat at all. It often contains tofu(豆腐), made from soy plants.

The hot dog is shaped like a tube. Many people say it looks like a kind of dog. It is served between two shaped pieces of bread. Americans often say they especially like hot dogs cooked over a hot fire in the open air. People at sports events buy plenty of hot dogs.

For many people, it is not just the meat that tastes so good. These people enjoy colorful and tasty additions. For example, they include a yellow or yellow-brown thickened liquid called mustard. They may also put red catsup(酱)and pieces of a white or red, strong-smelling vegetable called onion on their hot dogs.

Hot dog eaters often add pickle, a salty green vegetable. Some people place barbecue sauce on top of all this. Or they use a spice called horseradish(山葵). It gives the hot dog a pleasant bite.

A hot dog is also known as a frankfurter or frank. That is because the city of Frankfurt am Main, Germany is often said to be the birthplace of this sausage. But the National Hot Dog and Sausage Council says there are other ideas about where the hot dog began.

One version of hot dog history says a butcher, or meat cutter, from the German city of Coburg was responsible. It says he invented the hot dog in the late 160Os. Vienna, Austria, also claims that it created the food.

The council says butchers from several countries probably brought common European sausages to America. A street salesman sold hot dogs to people in New York City in the 1860s. And, in 1871, a hot dog stand opened at the Coney Island amusement park in New York City.

Hamburger and Fries

Americans also eat lots of hamburgers. This ground meat comes from beef. It can be cooked in many ways. Like hot dogs, hamburgers are a favorite picnic food.

Many public eating places in the United States say hamburgers are their most popular foods. People often eat them in places that serve quickly prepared, moderately priced food.

Like hot dog experts, hamburger historians disagree about how their subject got started. The Egyptians and Romans apparently ate ancient versions of hamburgers. In more modem days, people in Hamburg, Germany, made something like a hamburger from pork and beef.

The small town of Seymour, Wisconsin, is among several American towns that claim to have created the first modem hamburger in the United States.

In Seymour, a man named Charlie Nagreen tried to sell meatballs at a local fair in 1885. But as people walked around, it was hard for them to handle the round pieces of meat. So Nagreen flattened the ball of meat. Then he placed this meat pie between two pieces of bread.

For example, pickles are cucumbers that are preserved with salt. Through the years people have continued to learn new and better ways of preserving food from one growing season to another. Today millions of people work in jobs that have something to do with food preservation.

Suppose you were walking up and down the aisles of a modern supermarket. On the shelves you would find food preserved in many different ways. You would see canned tomatoes and peaches in glass jars. These foods were first sealed in airtight containers and then heated to high temperature. If there was a break in the seal, the food would soon spoil You would also see dried and powdered food on the shelves. You would see prunes and raisins. You would see powdered milk and powdered eggs. Some dried foods, such as onions and potatoes, can of course be kept for tong.

If you walked past the dairy counter, you would find many foods that have been treated to kill any harmful germs that might have been in them. Milk is a good example. It may be unsafe to drink ram milk, that is, milk just as it comes from the cow. If the milk is heated and then cooled, the harmful germs are killed. The man who discovered this way of treating milk was a Frenchman named Louis Pasteur. Milk so treated is called pasteurized milk and the process is called pasteurization.

In the supermarket you would also find many frozen foods, frozen fruits, vegetables, meat and fish. Because techniques for freezing food are being improved, more and more frozen foods are appearing on the market, and more and more people are buying them. Fruits and vegetables sold in the supermarket are often frozen as soon as they are picked. The sooner fruits and vegetables are frozen, the better freezing machines can be taken into fields where the food grows, so that little time is lost between picking and freezing.

Many Americans with large families now have their own freezers and freeze their own food. Because fruits and vegetables are cheaper when they are in season, a housewife often buys more than she can use in a few days or even in a week and then freezes the rest. Preparing food for the freezer is a fairly simple process. To prepare strawberries, for example, the housewife simply needs to clean them, put them on a tray in the freezer for a few hours, then put them in plastic bags. Bread, cakes, cooked and uncooked pies can also be kept in a freezer.

With the improvement in methods of food preservation, people no longer have to stuff one day and starve another. They can have a well-balanced diet all year round.
